quick and super yummy banana muffins....

i don't even know where this recipe comes from.... it's been in my head for years... it takes a few minutes to throw together and 20 minutes to bake and then you have yummy hot muffins for morning or afternoon tea

{perfect to use up those brown bananas too}



ingredients

{preheat oven to 180C and prepare a muffin tin :: 1 cup capacity}
  • 2 large bananas or 3 medium ones mashed {the riper the better}
  • 2 eggs
  • 1/3 cup sugar {i omit this when baking for the kids}
  • 3 cups plain flour {you can use wholemeal if you like}
  • 1/3 cup vege or olive oil
  • 1 1/2 tablespoon baking powder
  • 1 1/2 cups milk

mix all the the dry ingredients in a large bowl and set aside

mix all of the wet ingredients together is another bowl

mix the 2 together, but don't over mix, it only has to be just combined

leave for 10 minutes and then divide into evenly into 10 muffins

bake for 20 minutes

scoff warm with butter and a hot cup of tea or coffee

Hi I'm Charli, found you through Kellyansapansa. Great recipe.
I find that applesauce works perfectly in place of oil in cake and muffin recipes, and is much better for everyone! I make my own or use the woolworths brand withno added sugar :)
